GINGERBREAD ENERGY BITES
~ makes 16 small bites
- ½ cup almonds
- ½ cup pecans
- 30 pitted dates
- ¼ cup pepita or sunflower seeds
- ½ cup unsweetened flaked coconut
- 2 TBSPs molasses
- 2 ½ teaspoons cinnamon
- 1 ½ teaspoon ground ginger
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ¼ teaspoon sea salt
First pulse all nuts in a food processor on high until reduced in size by half. Then add dates. Pulse on high until sticky, next add pepita or sunflower seeds and coconut. Continue to pulse until completely mixed. Add additional mix-ins at this time and pulse for 30 seconds. Press mixture into small balls in your hands and place on cookie sheet. Freeze for 1 hour so shape holds. Store in an airtight container (I prefer them chilled in the refrigerator)! They won't last long enough to go bad :)
