Apple Cinnamon Baked Oatmeal
~ serves 6 adults; gluten-free and dairy-free option
Ingredients
2 large eggs
1 ½ cup milk of choice (I use unsweetened vanilla almond milk)
1 cup unsweetened applesauce
¼ cup pure maple syrup
2 teaspoons vanilla
2 ½ cups rolled oats
½ cup milled flaxseed
1 tablespoon cinnamon
2 teaspoon baking powder
½ teaspoon salt
1 medium-large apple, diced into small cubes
½ cup raisins or chopped walnuts (optional)
Instructions
Preheat the oven to 350 and spray a 2 quart casserole dish or 8 x 8 inch pan with nonstick spray.
Whisk all wet ingredients together.
Stir in the dry ingredients, including the apples and raisins/walnuts.
Spread the oat batter in the prepared pan and bake for 30-35 minutes or until the center no longer jiggles.
Serve with milk, yogurt, warm syrup, or peanut butter.
