Peanut Butter Banana Baked Oatmeal

~ serves 4-6

Ingredients

  • 2 medium/large ripe bananas, mashed

  • 2 large eggs

  • ½ cup creamy peanut butter

  • 2 tablespoons pure maple syrup

  • 2 teaspoons cinnamon

  • ½ teaspoon salt

  • 2 teaspoons baking powder

  • 2 ½ cups rolled oats

  • ¼ cup milled flaxseed

  • ¼ cup collagen peptides (optional)

  • 1 ¼ cup milk of choice (I used unsweetened vanilla almond milk)

  • 3/4 cup blueberries (fresh or frozen; optional)

  • optional: top with a sliced banana

Instructions

  1. Preheat the oven to 375 degrees F and grease a 2-quart size baking dish. I use avocado oil spray.

  2. Mash the bananas in a large bowl.

  3. Add the eggs, peanut butter, maple syrup, cinnamon, and salt. Whisk together.

  4. Add the oats, flaxseed, collagen, and milk. Stir until combined.

  5. Add in the blueberries (if using) and stir until distributed evenly.

  6. Pour the mixture into the prepared dish and place in the center of the oven.

  7. Bake for 35-40 minutes.
