Raspberry Vanilla Overnight Oatmeal

~ serves 1; gluten-free option & vegan

- ½ cup old-fashioned oatmeal or ⅓ cup steel cups oats

- 2 TBSPs unsweetened flaked coconut (optional)

- 1 TBSP chia seeds

- 1 TBSP milled flaxseed

- 1 TBSP maple syrup

- ¼ teaspoon vanilla extract

- ¾ cup almond milk (vanilla or plain)

- 10 fresh or frozen raspberries

     Mix all ingredients in 16 oz jar and store overnight in the refrigerator. Stir prior to eating. You can either eat this cold or warm it in the morning. I suggest trying it cold first, it is surprisingly tasty this way!
