BLUEBERRY CAULIFLOWER SMOOTHIE BOWL
~ serves 1, gluten-free, dairy-free
- 1- 1 ¼ cup of unsweetened coconut or almond milk
- 1 teaspoon spirulina (optional)
- 1 TBSP flaxseed meal
- 1 TBSP chia seeds
- ½ cup frozen blueberries
- 1 large handful of spinach or kale
- ½ of a frozen banana (peel and cut bananas in half prior to freezing, store in ziplock bag)
- 1 cup frozen cauliflower pieces (cauliflower rice)
- 1 scoop of vanilla protein powder or 1 serving collagen peptides
*top with 1 teaspoon chia seeds and 2 TBSPs flaked coconut or chopped walnuts (optional, but included in nutritional information)
Place all ingredients into a high speed blender and blend until smooth (you may need to stir it once and awhile as the smoothie should be fairly thick). Transfer to a bowl and top with chia seeds and coconut or walnuts.
